millets kara kuzhi panniaram


Are  you  bored  of  idly  and  dosa  ,  then  try  millet  kuzhi  paniyaram    for  a  change.  This  is  loved  by  both  kids  and  adults    equally.

Ingredients:

1.   Barnyard millet / kuthiravali                                         ---- 50 grams
2.   foxtail millet / Tenai                                                   ----  50 grams
3.   kodo millet / varagu                                                  ---- 50 grams
4.   little  millet / samai                                                     ---- 50 grams
5.   proso millet / panivaragu                                           ---- 50 grams
6.   urad dhal                                                                  ---- 100grams
7.  pearl millet / kambu                                                   ---- 50 grams
8..  solam                                                                       ---- 50 grams
9.   fenugreek seeds                                                        ---- 1 tablespoon
10. red chillies                                                                 ---- 8 to 10 nos
11.  salt to taste
12.  oil
13.  big onion                                                                ---- 2 nos ( chop finely )

preparation  method

1.  wash  the  millets  &  dhal  altogether  until  the  water  runs  clean  .  soak  in  enough  water   ,  add  the  fenugreekseeds    also   for  3 to  5  hours  .

2.  Then  grind  it  along  with  salt  and  red chillies  and  leave  it  aside for  8 hours  for  fermentation.

3.  Heat  1 tablespoon  of  oil  in  a  pan  add  mustard  seeds ,  when  it  splutters  add  urad dhal , then  add chopped onions , ginger , curry leaves & coriander  leaves.

4.  now  mix the above with  the paniyaram batter.

5.  Heat a paniyaram pan , add 2 to 3 drops of oil in each hole and pour  a  spoon   of batter  in  each  hole.

6. keep  the  heat  in  medium low  and  close the  pan.  once the edges  turn  golden  brown , turn  the  paniyaram  using  a  stainless  steel  rod  or  spoon.

7.  cook  the  other  side  also  till  golden  brown.  Remove  from  pan  using  a  red  or  spoon  and  serve  hot  with  tomato  chutney  or  kara  chutney

varagarisi kozhukattai



The  kodo  millet  dumplings  varagarisi  kozhukottai  recipe  is  very  easy  to  make  with  very  minimal  and  normal  ingredients  that  is  available  at  homes.  it  comes  with  its  unique  flavour  that  is  too  good  compared  to  normal  rice  dumplings.

Ingredients

1. kodo millet / varagarisi                               ---- 1 cup
2. Toor dhal                                                  ---- 3 tablespoons
3. pepper                                                      ---- 1/2 teaspoon
4. jeera                                                         ---- 1 teaspoon
5. oil                                                             ---- 2 teaspoons
6. channadhal                                                ---- 1 tablespoon
7. uraddhal                                                    ---- 1 tablespoon
8. mustard                                                     ---- 1/2 teaspoon
9. big  onion                                                  ---- 1 no ( chop finely )
10.Red chillies                                               ---- 2 no
11. coriander leaves chopped                        ---- 3 tablespoons
12. grated coconut                                        ---- 4 tablespoons
13. salt to taste

preparation  method

1. first  grind  the  varakarisi ,  toordhal , pepper  and  jeera  in  a  mixer  grinder  to  a  coarse  powder.

2. Heat  a  kadai  with  oil.  At  the  same  time  boil  3 glasses  of  water  in  a  kettle.

3. now  add  channadhal ,  urad dhal ,  mustard  to  the  kadai  and  wait  till  they  turn  brown.

4.  Then  add  chopped  onions ,  redchillies  and  saute  for  a  while.

5.  Then  add  the  grinded  varagarisi  ,  salt  to  taste ,  grated  coconut  and  saute  for  a  while.

6.  Then  add  coriander  leaves  .

7.   Now  pour  the  boiling  water  and  saute  till  it  turns  thick  in  consistency.

8.   Add  curry  leaves  and  switchoff  the  flame  and  mix  it.

9.    Allow  it  to  cool  for  a  minute  . when  it  is  touchable  by  hand  make  small  dumplings   and  steam  cook  it  for  about  5  to  10 minutes.

Easy  and  tasty  millet  dumplings  are  now  ready  to  be  serve   it  hot !
Enjoy  this  with  coriander  chutney  or  coconut  chutney  of  your  choice.

kadalai urundai / peanut Balls


                                                    It is  an  tradionally  made  laddus.   In  olden  days  people  used   to  offer  groundnuts  and  jaggery  if  any one  arrive  at  their   home  during  hot  sun  defore  offering  water.  Even  today  many  people  observe  this  groundnut  and  jaggery  eaten  together  are  said  to  increase  the  hemoglobin     level  and  is  good  for  your  health.    It  is  also  very  easy  to  make  as  the  ingredients  are  readily  available  at  home  and  it  just  takes  some  time  to  make  it.  Do  try  out  this  simple  yet  traditional  laddu.

Ingredients



1.  Roasted  unsalted  groundnuts                                 ---- 1 cup
2.  jaggery                                                                   ---- 1/2 cup

preparation  method

1.  peal  the  skin  of  the  roasted  peanuts.
2.  Then  mince  the  peanuts   coarse  like  bread  crumbs.
3.  Then  add  jaggery  powder  and  blend  one  more  time.
4.  Now  roll  into  small  medium  sized  balls.

store  in  air tight  containter  and  store  for  a  month.

note

no  need  to  make  syrup  out  of  the  jaggery

ukkarai

Ingredients

1.  channa  dhal                                                 ---- 1 cup
2.  grated  coconut                                            ---- 1/2 cup
3.  jaggery                                                        ---- 1 cup
4.   ghee                                                            ---- 2 tablespoons
5.   salt a  pinch

preparation  method

1.   soak  the  channadhal  for  2  to  3  hours.

2.   Then  wash  and  drain  the  excess  water  .  then  grind  the  dhal  into  a  coarse  paste  ,  do  not  add   water  ,  add  a  pinch  of  salt  to  it.

3.   Then   boil   a  idly  vessel  and  make  idles  of  this  batter.  Then  cool  the  idles   and  scramble  them  with  your  hands.

4.   Then  heat  a  pan  and  add  the  powdered  jaggery  with  very  less  water  ( below  1/4 cup  of  water)  and  bring  it  to  boil.

5.   Then  add  the  channa dhal  mixture ,  cardamon  powder,  ghee   and  coconut  and  mix  well,  until  it  reaches  the  texture  of  puttu.


serve  hot  !1

karuveppilai Thokku

This  thokku  cures  indigestion  and  stomach  upsets.

Ingredients


1.   curry leaves                                        ---- 4 cups
2.   Tamarind                                            ---- a lemon size ball
3.   dry red chillies                                    ---- 4
4.  pepper                                               ---- 1/4 teaspoon
5.  dried sundakai                                   ---- 10 nos
6.  cumin seeds                                       ---- 1/2 teaspoon
7.  salt to taste
8.  ghee                                                 ---- 1 tablespoon
9.  gingerlly oil                                       ---- 5 tablespoons
10. mustard                                          ---- few
11. Asofotida                                       ---- 1/2 teaspoon

preparation  method

1.   soak   the  tamarind  in  water.
2.    Heat  a  teaspoon  of  ghee  and  saute  the  sundakkai  till  black,  but  should  not  be  burnt.  Then  transfer  it  to  a  vessel  and  keep  it  aside.
3.   using  the  same  pan  heat  a  spoon  of  oil  and  fry   the  pepper  and  chillies  and  keep  it aside.
4.   Now  heat  a pan  and  saute  the  curry  leaves  without  moisture  and  keep  it  aside ,  when  it  is  cool  grind  along  with  tamarind ,  pepper  and  chillies  to  a  smooth  paste.
5.   In   the  same  pan ,  heat  gingerlly  oil ,  add  mustard  seeds  and    asofotida   ,  when  it  starts  spluter  then  add  cumin  seeds  and  grounded  paste  and  fried  sundakkais ,  then  salt to taste  and  stir  it  ofen  so  that  it  doesn't   stick  to  the pan.    .  when   oil  leaves  the  side  and  it  is  thick  then  transfer  it  to  a  bowl.
6.   store  in  a  sterile  bottle.    This  can  be  used  as  side  dish  for  Idli ,  dosa ,  adai ,  curd  rice  or  with  hot  rice.

garlic Rice with fresh Brazil leaves

Ingredients

1.  cooked  Rice                                                  ---- 2 cups
2.  garlic chopped                                                ---- 6 tablespoons
3.  fresh Brazil  leaves / Thulasi leaves                  ---- 20 nos
4.  salt to taste
5.  Turmeric powder                                           ---- 1 pinch
6.  oil  or  ghee                                                   ---- 1 tablespoon
7.  freshly grounded pepper                                ---- 1 tablespoon

Preparation  method

1.  Heat  a  kadai  with  a  tablespoon  of  oil  and  fry  chopped  garlic  and  brazil  leaves ,  then  add  salt to taste ,  turmeric  powder  & pepper  powder.


2.  Then  add  the  cooked  rice  and  fry  it  for  2 more  minutes.

serve  it  hot.

Varutha Thattaipayar Kulumbu

Ingredients :

1.    Thattaipayar                                    ---- 1 cup ( dry roast in a kadai )

2.    small onions                                    ---- 20 nos ( chopped )

3.    Tomato                                          ---- 1 no ( chopped)

4.   Red chillies                                     ---- 4 to 5 nos

5.   coriander  seeds                             ---- 1 tablespoon

6.    Turmeric powder                          ---- 1/4 teaspoon

7.    salt to taste

8.    grated  coconut                             ---- 4 tablespoons

9.    oil                                                 ---- 1/4 teaspoon

10.   mustard , jeera , fenugreek seed    ----    each 1/4 teaspoon                         

11.    Asofotida                                   ---- 1/4 teaspoon

12.     curry leaves  few

13.  any one vegetable ( brinjal , drumstick,bottle gourd, mushroom )---- any variety 2 or 3 nos


Preparation Method

1.    Heat   a kadai   & dry roast  the  thattaipayar   and  keep  it aside.

2.   grind  the coconut  to a smooth paste.

3.    Heat  a kadai  &  fry  red chillies  & coriander  seeds ,  then cool  it  and  grind  it to a  smooth paste  adding  little  water  to  it.

4.   Heat  a  pressure  cooker  and  add  the  roasted  & washed  thattaipayar ,  grinded chilli &  coriander  paste ,  turmeric powder,  chopped tomato   and  add  2 cups  of water   and  pressure  cook  it for  2 to 3 whisles.

5.   Now  open  the  lid  of  the  pressure  cooker  and  again  heat  it  and  add  salt to taste ,  any one  of  the  chopped  vegetables  and  grinded  coconut  paste  and bring  this to  boil.

6.   Meanwhile   it  is  boiling  heat  a  separate  kadai  and  add  1/2 teaspoon  of  oil  to  it  and  add  mustard ,  jeera , fenugreek seeds ,  chopped onions ,  asofotida   and  curry leaves,  and  saute   this  till  the  onions  comes  to  golden  brown.   Then  put-off  the  flame  and  add  this   to  the  boiling  kulumbu.

7.   When  the  kulumbu  is  thick  enough  &  the  vegetable   is  soft  & cooked    then  put-off   the  flame.

Serve  this  for  white  Rice  or  even  with  kumbu  satham   or  Ragi  kalli   or  even  with  Iddly ,  dosa.
note;

*  This  is one  of  the  traditional   method  of  cooking.

*  The  dry  roast  thathaipayar  gives  a nice  aroma  to  this  kulumbu.

*  more over  the  vegetable  which  we  add  to  this  kulumbu  also  tastes  good  with  a  nice  aroma.

Pithukku moochai kulambu


Pachai   moochai   is  a  seasonal  vegetable,  people  are  really  crazy  about  it  and  keep  buying  it  very  frequently   during  the  season.   The  outer  skin  of  mochai  payaru  is  removed   after  soaking  it  in  water  and  then  used  in  this  kulumbu.   Pacharisi   saadam  with  this  pithukku  payaru  kulambu  tastes  great  when  it  is  hot.   This  is  a  special  traditional  reciepe.


Ingredients:


1.   pithukku  moochai                                    ---- 2 cups

2.   grated coconut                                         ---- 2 tablespoons ( grind it )

3.   chilli powder                                            ---- 1 1/2 teaspoon

4.   coriander powder                                    ---- 1/2 teaspoon

5.   turmeric powder                                      ---- 1/4 teaspoon

6.   salt  to  taste

7.   small  onions                                           ---- 10 nos ( chop it )

8.    green chillies                                          ---- 2 nos ( slit into half)

9.    tomato                                                   ---- 1 nos ( chop it )

10.   tamarind                                               ---- 1 small pebble size

11.   tender coconut                                     ---- 1/2 cup chopped  length wise

12.   oil                                                         ---- 1/2 teaspoon

13.   mustard                                               ---- 1/4 teaspoon

14.   jeera                                                   ---- 1/4 teaspoon

15.   Asofotida                                           ---- 1/4 teaspoon

16.   curry  leaves  few

Preparation  Method

                    
1.   Heat   a  pressure  cooker  and  add  pithukku  moochai  ,  2 cups  of  water ,  turmeric powder , coriander powder , chilli powder , chopped tomatoes   and  pressure  cook  it  for  1 whistle.

2.   After  cooling  open  the  lid  and  add tamarind  water , salt  to  taste  and  boil  it  to  2 more minutes,   then  add  grinded  coconut  paste  and  chopped  tender coconut   and  allow  this  to  boil.

3.   Then  heat  a  separate  kadai  with  1/4 teaspoon  of  oil  and  add  mustard ,  jeera ,  asofotida, curry leaves ,  chopped  onions   and  saute  till  light  golden  brown  in  color  and  add  green  chillies   and  add  this  to  the  boiling  kulumbu.

4.   when   the  kulumbu  is  thick  enough   then  put-off  the  flame.

Now   serve  this  kulumbu  with  pacharisi  saadam.    This   is  a  traditional  south  Indian  pongal  recipe.

Sorghum bi- color Pooridge

Sorghum   is  the  5 th  most  important  cereal ( after  wheat  oats  corn  and  barley )  cultivated  in  the  world.   Sorghum  bi-color   is  said  to  be   karuncoolam    in  Tamil ( Irrumbu soolam ).  sorghum  bi-color   has  been  used  as  an  herbal  remedy  to   give  immunity  to  the  body.   It   strengthen   and  energize  the  immune  system.   It   helps  to  elimate   toxic  wastes  from  the  body.   It  assists  in  the  building  of  blood  cells.   It   is  known  to  have  ability  to  revive  sickle  cell  victims.  It   promotes  the  free  flow  of  blood  and  lowers  cholesterol  levels.

Ingredients :
1.    sorghum  bi-color                                 ---- 1 cup
2.    kollu                                                    ---- 3 to 4 tablespoons
3.    salt  to  taste

Preparation  Method

1.   Dry   roast  the  kollu  and  remove  the  skin  out  of  it. ( other wise  you  can  use  without  removing  the  skin )

2.   Soak   sorghum  bi-color  for  1 hour  in  water,    then  wash  it.

3.   Then  heat  a  pressure  cooker  add  5 to 6 cups  of  water  soaked  sorghum ,   roasted  kollu  parupu,  salt to taste   and  close  it  with  a  lid  and  pressure  cook  it  for  6 to 7  whistles.
4.    Then  cool  it  and  open  the  lid   and  transfer  it  to  a  serving  bowl.

serve  this  healthy  porridge   with  parupu  thovayal


Parupu  thovayal

Ingredients

1.   moong dhal                           ---- 3 tablespoons

2.  dry red chilli                          ---- 1 no

3.  salt  to  taste

4.  curry leaves                           ---- few

5.   garlic                                   ---- 2 pod


Preparation  Method

1.   Dry   roast  the  moongdhal ,  then  along  with  that  add  the  remaining   ingredients  and  grind  it  to  a  coarse  paste  adding  a  very  few  water    to  it  ( just  sprinkling  few  water )

2.   Then  transfer  to  a  bowl  and  serve  it  along  with  porridge.

Kambu Paniyaram

Ingredients :

1.    kambu                                            ---- 2 cups

2.   Rice                                                ---- 1/2 cup

3.   urad dhal                                         ---- 1/4 cup

4.   Green chillies                                   ---- 5 nos

5.    carrots & beans chopped               ---- 1/2 cup

6.    Big onions                                      ---- 2 nos ( chopped )

7.   curry leaves & coriander leaves       ---- few ( chopped )

8.   oil

9.   mustard  &  urad dhal                     ---- 1 teaspoon

10.  fenugreek seeds                            ---- 1 tablespoon

Preparation  Method

1.   Soak   fenu greek seeds ,   rice ,  &  kambu   altogether    for   2 hours   in  water.

2.    soak  urad dhal     in  water   separately   for  1 hour.

3.    Then   wash  &  grind    the  Rice  &   kambu   separately    adding    salt  to taste.

4.    Then   wash   &   grind  urad dhal   separately.    Now  mix  both  the   batter   and  keep  it  aside  for  6  to  8 hours.

5.    Then   heat  a  pan   add  1/2 teaspoon  of  oil    then  add  mustard ,   urad dhal,   chopped  onions  &  green chillies  &   chopped  vegetable    and  fry   this   for  2  to  3  minutes    then  add   chopped  coriander  &  curry leaves    and    add   this  to  the  grinded   batter   and  mix  well.

6.    Now   heat  a  paniyaram  pan     and  grease  the  moulds  with   generous  oil   and  pour  the   well  mixed  batter  in  it.    cook   in  very  low-flame    and  flip    and  cook  on  the  other  side  too.

7.    When   it  is  crispy  then  remove  from  flame.


Serve    this  with  a  tangy  &  spicy   chutney !

Tips

*  For  the  paniyarams  the  batter  should  be  a  bit  watery.....  if  it  is   too   thick,   they   will  be  very  hard....

*   As   the  batter  is  not  fermented  the  paniyaram  will not   be  browned.

*    You  can  also  add  soaked  channa dhal   in  the  batter  while  pouring  paniyarams.

Kollu Rasam

We  cook  many  dishes  with  kollu   which  is known  as  horse gram.   Kollu rasam   is  normally  prepared  to  treat   cough /  cold.   If  this  is  taken  with  white  rice  for  2 days   when  we  have  cold,   the   cold  will  be gone  with  no traces.   kollu  rasam   is  one  of  the  traditional  dishes.   kollu   has  lot  of  medicinal  valve  and  it  is  used  in Ayurvedic  medicine


Ingredients :


1.    Tamarind                                            ---- small  lemon size ball

2.    kollu                                                  ---- 2 tablespoons

3.    black pepper                                    ---- 1 teaspoon

4.    jeera /  cumin seeds                          ---- 1 teaspoon

5.    coriander seeds                               ---- 1 teaspoon

6.    dry red chillies                                 ---- 3 nos

7.    curry leaves & coriander leaves

8.    salt to taste

9.    oil /  ghee                                      ---- 1/4 teaspoon

10.    mustard & fenugreek seed          ---- few

11.   Asofotida  powder                      ---- 1/4 teaspoon

Preparation   Method

1.      Dry  roast  the  kollu  in  a  pan ,  grind  the  roasted  kollu ,  pepper ,   jeera seeds   &  coriander  seeds  as  powder.

2.     soak    tamarind  in  water  &  extract   the  tamarind   water.

3.     Heat    a  kadai   with  oil    and  then   add  mustard ,  fenugreek seeds ,   asofotida ,   curry leaves  & red chilli.

4.     Then   add  tamarind  water ,  salt  to  taste ,   grinded  powder    and    1  cup  of  water    and  cook  the   rasam   until  the  rasam  bubbling   finally    add    chopped  coriander   leaves.

*     tips

*      This    is  excellent  for  treating  cold.
*      The   kollu   rasam   was  also  enjoyed  as  a  soup.

Mushroom Kulumbu

my  grand mothers  used  to  pick  mushrooms  from  wild  and  prepare   kalan  kulumbu   in  early  mornings  with   Ragi  kalli  or  venthaya  kalli    this   traditional   way  of  preparing  kalan  kulumbu   with  light  spicy  gravy ,   I   have  never  tasted  such  a  tasty  one   yet  any where.   This  village  style   kalan  kulumbu   even  goes  well  with  white   Rice ,  chapathi ,  Iddly   and  dosa.
Ingredients :


1.      wild  mushrooms                                  ---- 5 to 6  ( Big size )

2.      small  onions                                        ---- 10 nos  ( chopped )

3.    urad dhal                                               ---- 1 tablespoon

4.    Red  chilli                                              ---- 4 nos


5.    Raw  Rice                                            ---- 1 tablespoon

6.    dry coriander seeds                              ---- 1 tablespoon


7.    turmeric powder                                  ---- 1/4 teaspoon

8.    grated  coconut                                   ---- 3 tablespoons

9.    mustard ,  jeera                                   ---- few


10.  oil                                                      ---- 1/2 teaspoon

11. Asofotida  powder                             ---- 1/4 teaspoon


12.   curry leaves                                     ---- few

Preparation  Method


1.    Wash   clean  &  cut  the  mushrooms  into  big  size.

2.    Heat   a  pan  and  dry  roast  urad dhal ,  red chillies ,   raw rice ,    jeera ,   dry coriander seeds ,  each  separetly     and  cool  down.

3.     Then  along  with  the  roasted  ingredients   add  grated  coconut  and  grind  to  a  smooth  paste   adding  water  to  it.

4.    Now   heat  a  kadai  and  add  1 teaspoon   of  oil  and  add  mustard ,   jeera ,   Asofotida ,   curry leaves ,   chopped  onions    and  then  add  mushrooms   and  saute  for  2  to  3 minutes.

5.    Then   add  little  salt  to  taste ,   turmeric  powder ,   grinded  paste    and  2  to  3  cups  of  water  and  bring  to  boil.

6.    While  boiling  immediatly  the  kulumbu   will  become   thick.   ,  if  it is   then  add  little  more  water   and  boil  till  the  raw  flavour  vanish.

7.    Then   put-off    the  flame.
Serve  this  with  any  type  of  kali  or  with  hot  Rice.

Thuthuvalai Rasam

Thuthuvalai     is  a  creeper   used  in  herbal  medicine.   This  grows  very  well   in  damp  areas.   This  creeper  &  leaves  have  small  thorns.   It   bears  a  flowers  purple  in  co lour  and  a  fruit  red  in  colour .   In  many   homes  they  grow  this  in  their  kitchen  gardens.   This  leaves   can  be  cook  in  different  forms.   This  leaves  reduces  cough  &  phlegm  in  addition  to  improving   digestive  functions.  This  leaves  are  much  used  in  herbal  medicine   for  chest  disease   &  digestive  disorders.

Ingredients :

1.    Thuthuvalai  leaves                       ---- 20 nos

2.   Tamarind                                      ---- marble size

3.   Red  chillies                                 ---- 2 nos

4.   jeera                                           ---- 1 teaspoon

5.   Black pepper                             ---- 1 teaspoon

6.   Horse gram /  kollu parupu         ---- 1 tablespoon

7.    garlic                                        ---- 2 nos

8.   mustard  & fenugreek seed        ---- few

9.   Asofotida                                 ---- 1/4 teaspoon

10.  oil                                           ---- 1/4 teaspoon

11.  curry leaves  few,    salt  to  taste


Preparation  method

1.    Soak   tamarind  in  water  &  extract  juice   from  it  and  keep  it  aside.

2.    Take   1 red chilli ,  jeera ,  black pepper ,  horse gram ,  thuthuvalai leaves   and  grind  to a coarse  paste.

3.    Now   heat  a   kadai   add  1/4 teaspoon  of  oil ,   then  add  mustard ,   fenugreek ,   red chillies ,  crushed  garlic ,  Asofotida,   curry  leaves ,   when  it  starts  spluttering    then  add  grinded  paste    and  2  cups   of  water ,  salt  to  taste ,   and  bring  to  boil  and  remove  from  fire.

Serve  this  with  hot  white  Rice   or  even  it  was  enjoyed  as  a  soup  in  cold  winters.

Drumstick Flower Curry

The   drumstick   flowers   are   very good  source   for   vegetarians    and   it   has  highest   protein   amount   of   any  other   plant   on earth.   consuming   different   parts  of  the  drumstick   tree   can  help  in  increasing  over all   body  resistance.
Ingredients :

1.     Drumstick  flowers                                     ---- 2 cups

2.    Big onion                                                    ---- 1 nos ( chopped )

3.    Turmeric powder                                       ---- 1 pinch

4.    Red chilli powder                                      ---- 1/4 teaspoon

5.   salt  to  taste

6.   Tamarind  plup                                           ---- 2 tablespoons

7.   jaggery                                                     ---- 1/2 teaspoon ( optional )

8.    oil                                                         ----   1/4 teaspoon

9.    mustard seeds                                          ---- few

Preparation Method

1.  Wash   &  clean   the  flowers.

2.   Heat   a pan  add  1/4 teaspoon  of  oil  &  add  mustard  seeds.
3.   Then  add  chopped  onions  &  drumstick   flowers    and  saute  for  3  to  4 minutes.
4.    Then  add  turmeric  powder ,  red chilli  powder ,  salt  to  taste   &  tamarind  pulp   and  sim  down  the  flame   and  cook  for  2  to  3  minutes.
5.    If   you  wish  then  add  1/2 teaspoon  of  jaggery  and   mix  well.   Then  put-off   the  flame.

Serve  with  Rice  &  dhal.

Kambu Satham & Kambu koozh & Kamdu Thayir sadam

Quiet   often   in   summer days   I    use  to  cook  kambu sadham (  pearl  millet )   and   kambu  thaiyer   sadam   for   lunch   and   even   kambu   roti's  for   dinner .  Kambu   or   pearl  millet  is   cereal   kind   of   Tamil nadu .

                                                                  Millets   are   the   oldest   grains   that   humans   have   consumed .   It   is   the   staple   food   of   farmers .   It   is   a   healthy   and   non- acidic   after   consumption .     These   grains   are   rich   in   fibre   and   can   be   good   alternatives   to   rice .     From   my   child hood   I   love   to   eat   kambu  satham    and   chola  satham .

                                                                 Cereals   are   very   close   nutrition   wise   to   rice   and   wheat   and   in   most   cases   even   better .    These   grains   besides   being   gluten   free   also   don't   have    the    high   glucose   content   of   rice   and   also   richer   in   vitamins   and   minerals   compared   to   rice .    I   am   surprise   at   why   they   lost   popularity   as   a   staple .

                                                                 It   contain   abundant   of   protein   and   main   source   of   energy   for   vegetarins ,   it  can  be   said   as   poor   man's   meat .    This   might   not   be   valid   no   move   and   more   it   is   the   rich   man   after   his   ultra   rich   fatty   glucosy   diet   and   has   been   advised   by   doctor   to   switch   to   a   more   appropriate   diet   which   includes   of   these   cereals .

                                                                 Kambu   koozh   is   an  extremely   healthy   dish .    kambu   is   rich   in   vitamin,   b6 ,  folic  acid ,   calcium ,  iron ,   potassium ,   magnesium   and   zinc .   A      glass  of   kambu   koozh   keep   the   body   energetic   and   cool .     It    is   very   simple   and   easy   to   prepare .  Now   it   is   available   in   most   of   the   grocery   shops .

                                                                   When   a  simple   dish   can   do   it   all ,   what   more   do   we   need   for   a   healthy   life?

kambu  satham
Ingredients
1.   kamdu                      -----1 cup

preparation  Method

1.    Wash   and   soak   kambu   for   1/2 hour ,   then   drain   the   water   from   it ,    then   put   it   in  a   mixi   jar   and   run   the   mixer   once   or   twice   in   whipper   mode ,   now   the   grain   is   partially   mashed   midly .

2.   {  always   add  2 cups  of   water   for  1 cup   of   kambu }

3.    Now   heat   a   pressure   cooker   add   1 cup   of    grinded   kambu   and   two  cups   of   water   and   little   salt   to   it   and   pressure   cook   it   as   rice   for   20 mintues   in   very   low  flame .

4.     Now   kambu   sadam   is   ready   to   consume .

serve   this   with   moorkulambu ,   sambar   or   with   mashed   greens .

Tips:   shape   the   cooked    kambu   satham   as   small   balls   and   keep   it   in   water   and   refrigerate   it   in   tight   containner .   By   this   method   you   can   use   till   a  week   of   days .

For    kambu   koozh

1.   Mash   the   cooked   kambu   balls   well ,   add   butter milk ,   sufficient   water ,   salt   to   taste   and   mix   it   well .

2.    Garnish   with   chopped   onions    and   serve   it   in   big   glass   tumblers .
      Its   a   very   yummy   drink.

For   kambu   Thayir  sadam

1.    Take   a    cup   of   cooked   kambu  sadam ,   add   little   salt   to   taste    and   1 cup   of   curd   and   mix   it   well .   If   you   prefer   onion   taste   then   add   chopped   small   onions   to   the   curd   rice   and   serve   it .

                                                    The   sweet   taste   of   the   onions   with   the   sourness   of   curd   tastes   extremely   good .





                                                    Then   by   hearing   the   nutrional   facts   of   kambu ,   why   can't   we   eat   this   for   a   meal   and   eat   this   kambu   thayir sadam    &   kambu  koozh????
