Quiet often in summer days I use to cook kambu sadham ( pearl millet ) and kambu thaiyer sadam for lunch and even kambu roti's for dinner . Kambu or pearl millet is cereal kind of Tamil nadu .
Millets are the oldest grains that humans have consumed . It is the staple food of farmers . It is a healthy and non- acidic after consumption . These grains are rich in fibre and can be good alternatives to rice . From my child hood I love to eat kambu satham and chola satham .
Cereals are very close nutrition wise to rice and wheat and in most cases even better . These grains besides being gluten free also don't have the high glucose content of rice and also richer in vitamins and minerals compared to rice . I am surprise at why they lost popularity as a staple .
It contain abundant of protein and main source of energy for vegetarins , it can be said as poor man's meat . This might not be valid no move and more it is the rich man after his ultra rich fatty glucosy diet and has been advised by doctor to switch to a more appropriate diet which includes of these cereals .
Kambu koozh is an extremely healthy dish . kambu is rich in vitamin, b6 , folic acid , calcium , iron , potassium , magnesium and zinc . A glass of kambu koozh keep the body energetic and cool . It is very simple and easy to prepare . Now it is available in most of the grocery shops .
When a simple dish can do it all , what more do we need for a healthy life?

Ingredients
1. kamdu -----1 cup
preparation Method
1. Wash and soak kambu for 1/2 hour , then drain the water from it , then put it in a mixi jar and run the mixer once or twice in whipper mode , now the grain is partially mashed midly .
2. { always add 2 cups of water for 1 cup of kambu }
3. Now heat a pressure cooker add 1 cup of grinded kambu and two cups of water and little salt to it and pressure cook it as rice for 20 mintues in very low flame .
4. Now kambu sadam is ready to consume .
serve this with moorkulambu , sambar or with mashed greens .
Tips: shape the cooked kambu satham as small balls and keep it in water and refrigerate it in tight containner . By this method you can use till a week of days .
For kambu koozh
1. Mash the cooked kambu balls well , add butter milk , sufficient water , salt to taste and mix it well .
2. Garnish with chopped onions and serve it in big glass tumblers .
Its a very yummy drink.
For kambu Thayir sadam
1. Take a cup of cooked kambu sadam , add little salt to taste and 1 cup of curd and mix it well . If you prefer onion taste then add chopped small onions to the curd rice and serve it .
The sweet taste of the onions with the sourness of curd tastes extremely good .
Then by hearing the nutrional facts of kambu , why can't we eat this for a meal and eat this kambu thayir sadam & kambu koozh????
