Lebanese Rice



Ingredients;

Basmathi Rice                                              ---- 2 cups
Ragi vermicelli                                            ---- 1 cup
olive oil                                                       ---- 2 tablespoons
 salt to taste
 cinnamon                                                   ---- 1 bit
 jeera                                                           ---- 1 tablespoon
 cardamon                                                   ---- 4 no


preparation method

 Rinse the rice well then place it in a bowl and cover with water. soak this for 15 minutes.Then  drain well.

 Heat  olive oil in a cooking vessel and add the vermicelli & jeera  and continuously stir to toast it evenly. vermicelli should  fry till it gets nice aroma.

 Add the Rice and salt , spices and continue to stir, so that the rice will be well coated with the olive oil. Now add 3 1/2 cups of water  and bring it to a boil until the water reduces. Then turn the heat to low and cover .

 Now   cook  for 15 to 20 minutes on low flame till it cooks. Turn the heat off and leave the rice undisturbed in its cooking pot for 10 to 15 minutes.

 Then transfer to  a serving bowl .

serve  this with any  side dish  of your choice! 

I served  this Rice with okra chicken curry.
