Bitter gourd is quiet widely used in the treatment of diabetes. Research studies have shown that bitter gourd contains hypoglycemic principles
in it and thus it helps to lowers the blood sugar levels just like insulin.
It is useful in reducing hypertension , eye disorder and cough and enchancing digestion , metabolism and immunity.
Bitter gourd juice is used for relieving constipation. Bitter gourd is a blood purifier , activates spleen and liver and is highly beneficial in diabetes.
Bitter gourd is helpful in the treatment of intestinal worms and diarrhea. Bitter gourd juice can help to prevent leprosy . Regular consumption of bitter gourd is known to improve skin condition.
To Reduce its bitterness :
1. Cut bitter gourd and immerse them in salt water adding little butter milk to it for some times . Then drain the water and wash it for 2 to 3 times and use for the desired recipe.
Ingredients :
1. Midhi pavakkai / kuruvithalai pavakkai
/ small bitter gourd / } ---- 250 grams
2. Big onions ---- 2 nos ( chopped )
3. Red chilli powder ---- 1 teaspoon
4. coriander powder ---- 1/4 teaspoon
5. turmeric powder ---- 1/4 teaspoon
6. tamarind ---- small pebble size ball
7. salt to taste
8. oil ---- 2 teaspoons
9. mustard & urad dhal ---- few
10. curry leaves ---- few
11. jaggery ---- 1 tablespoon
Preparation Method
1. Cut both ends of the bitter gourd and wash it .
2. Heat a kadai with oil and splutter mustard and urad dhal , add curry leaves .
3. Then add finely chopped big onions and saute till golden brown.
4. Add the bitter gourd and sprinkle little salt to it and saute for 3 to 4 minutes.
5. Then add tamarind water , turmeric powder , coriander powder , red chilli powder and 1/4 cup of water and close it with a lid .
6. When all the water evaporates and boiled then add jaggery and saute it in very low flame for 2 minutes . Make sure that bitter gourd is cooked and then switch off the flame .
Serve this delicious kuruvithalai pavakkai fry with sambar rice , it will taste very yummy.
