Mushrooms are low in calories they can help prevent obesity which is a risk factor for
many conditions including : Type 2 diabetes , certain types of cancer and cardio vascular
disease. mushrooms are very good source of nutrients including the B vitamin ,
vitamin D , the mineral copper , pottasium and the antioxidants ergothioneine and
selenium.
Often grouped with vegetables , mushrooms
provide many of the nutritional attributes of produce , as well as attributes more
commonly found in meat , beans or grains , mushrooms are low in calories , fat - free,
cholesterol - free and very low in sodium , yet they provide several nutrients that
are typically found in animal foods or grains.
I use to pick mushrooms from wild and prepare light spicy gravy . It taste well. when I get wild mushrooms I will post
that recipes also.
Ingredients:
1. mushroom ---- 200 grams ( chopped )
2. Tomatoes ---- 2 nos ( chopped )
3. Big onions ---- 2 nos ( chopped )
4. cashew nuts ---- 6 nos
5. grated coconuts ---- 4 to 5 tablespoons
6. ginger & garlic paste ---- 1/2 teaspoon
7. Red chilli powder ---- 1 1/2 teaspoon
8. coriander powder ---- 1/2 teaspoon
9. turmeric powder ---- 1/4 teaspoon
10. salt to taste
11. garam masala powder ---- 1/4 teaspoon
12. curry leaves & coriander leaves
13. oil ---- 1/2 teaspoon
Preparation Method
1. Grind grated coconuts & cashew nuts to smooth paste.
2. Chop the mushrooms.
3. Heat a kadai with 1/2 teaspoon of oil to it , then add garam masala powder , chopped onions & chopped tomatoes , ginger & garlic paste , mushroom and saute this for 2 to 3 minutes.
4. Then add red chilli powder , coriander powder , salt to taste and 2 cups of water and allow this to boil for 7 to 8 minutes.
5. Then add grinded coconut paste and add 1/2 cup of water and allow this to boil.
6. When the gravy is thick enough then put-off the flame and transfer it to a bowl.
Serve this mushroom gravy for Iddiappam , Appam , chapatties , dosa , puries , parata's
Roti's , Iddly , or with white Rice.
