Bottle gourd kheer is a delicious and creamy sweet pudding that is made from grated bottle gourd making it nutritious as well. It gets its delicious flavors and texture from saffron , cardamon , almonds and cashewnuts . you can serve the kheer hot or chill it in the refrigerator and serve it chilled.
Ingredients
1. skim milk/ or low fat milk ---- 1/2 litres
2. bottle gourd ---- 250 grams ( grate it )
3. ghee ---- 1 tablespoon
4. sugar ---- 4 tablespoons
5. saffron ---- 4 to 5 strands
6. cardamon powder ---- 1 pinch
7. almonds ---- 4 ( sliced )
8. condensed milk ---- 4 tablespoons
preparation method
1. Boil the milk in the thick bottomed pan.
2. In a separate pan ,Heat ghee , when it melts add grated bottle gourd and stir constantly and cook for 5 to 6 minutes in low flame.
3. when the milk starts boiling , then add the fried gourd , fried cashews and stir with a spoon. cook it on low heat. keep stirring every 2 minutes. cook the kheer until the bottle gourd and milk are mixed well with each other and reaches a thick consistency.
4. Then add the sugar & cardamon powder and boil for 5 more minutes.
5. Now put-off the flame and add 4 tablespoons of condensed milk and mix well. finally garnish it with saffrons and roasted almond stripes.
Now serve it warm or cold after your lunch or Dinner !
