Regular consumption of carrots reduces cholesterol level , which helps to prevent heart related problems. since carrots have vitamin A , it is good for eye sight also. carrots in your diet makes the skin softer and smoother. Thus carrot in its cooked form or raw , is good for your health.
Ingredients
1. Basmathi Rice ---- 1 cup
2. carrots ---- 3/4 cup grated
3. Big onions ---- 2 nos ( finely chopped )
4. Roasted groundnuts ---- 1 tablespoon( powder it coarsely)
5. oil ---- 1 tablespoon
For seasoning
1. garam masala ---- 1 teaspoon
2. mustard ---- 1/2 teaspoon
3. urad dhal ---- 1/2 teaspoon
4. channa dhal ---- 1/2 teaspoon
5. curry leaves few
For masala powder
1. coriander seeds ---- 1 teaspoon
2. cumin seeds ---- 3/4 teaspoon
3. Red chillies ---- 3 nos
4. grated coconut ---- 3 tablespoons
Heat a teaspoon of oil and fry the above ingredients , adding coconut at the end , then cool it and grind into powder and keep it aside.
preparation method
1. cook 1 cup of rice with 2 cups of water so that each rice are separate. keep this aside.
2. Now heat a pan and add 1 teaspoon of oil , then add garam masala , mustard , urad dhal , channa dhal , curry leaves , then add onions and saute till it becomes light pink.
3. Then add grated carrots and cook for a few minutes until the raw flavour vanish. Do not over cook , add the ground masala powder , salt to taste and mix well.
4. Then add the cooked rice and roasted peanut powder and mix everything well gently.
serve it with raita or chips or papads
