ingredients
1. karpooravalli ---- 10 to 15 leaves
2. oil ---- 3 teaspoons
3. urad dhal ---- 1/4 cup
4. coriander seeds ---- 1 teaspoon
5. cumin seeds ---- 3/4 teaspoon
6. Red chilli ---- 3 nos
7. ginger ---- small piece
8. garlic ---- 2 to 3 flaks
9. Tamarind ---- small bit
10.Asofotida ---- a pinch
11. mustard ---- 1/4 teaspoon
12. salt to taste
preparation method
1. Heat a pan with oil and roast urad dhal to golden brown , then remove it.
2. Then saute Ajwain leaves for a minute and keep this aside.
3. Then add coriander seeds , cumin , red chilli , ginger , garlic , tamarind , and salt & saute this till you get a good aroma.
4. Then turn - off the flame & cool it.
5. In a mixer , grind roasted urad dhal first , then add the other ingredients except Ajwain leaves and grind to a coarse mixture.
6. Then add Ajwain leaves and grind to a thick paste.
7. Now heat oil in a pan and add asofotida , mustard & cumin, then add the grinded mixture till it attains thick thuvaiyal texture.
serve it with hot Rice with ghee or even with idly , dosa
