Ridge gourd is peeled and chopped into small pieces and fried in oil till they are cook. Then mixture of besan flour is prepared and cooked along with ridge gourd.
Ingredients :
1. Ridge gourd ---- 1 big
2. Besan / gram flour ---- 3 tablespoons
3. curd ---- 1 small cup
4. green chillies ---- 5 no slit into half
5. Turmeric powder ---- 1 pinch
6. salt to taste
7. oil ---- 1/2 teaspoon
8. mustard & urad dhal ---- 1/2 teaspoon
9. jeera ---- 1/4 teaspoon
10. dry red chillies ---- 1 no
11. Asofotida ---- 1 pinch
Preparation Method
1. Peel the skin and chop the ridge gourd.
2. Whisk curd with besan flour & salt into a smooth paste adding around half a cup of water.
3. Now heat a kadai with a spoon of oil and then add mustard & urad dhal , red chillies , jeera , Asofotida , curry leaves , when it start spluttering then add green chillies & chopped ridge gourd.
4. cook this in low flame till ridge gourd is soft , if water is required for boiling then add little water.
5. Now add the curd & flour mixture to the cooked ridge gourd and put it in very low flame.
6. cook till the raw smell of the mixture is gone.
7. Finally put-off the flame & garnish with fresh coriander leaves.
Serve ridge gourd kadhi with plain white Rice or with Roti
Note
*Make sure ridge gourd is cooked well before adding curd mixture into the pan.
*For variation chopped onion can also add with ridge gourd.
