Ingredients:
1. Chopped mixed vegetable
( carrots , beans , potato , cauliflower , butter beans
peas , nukkol , turnip, etc depence upon the availability ) ---- 1/2 kg
2. Green chillies ---- 15 nos
3. Ginger & garlic paste ---- 1/2 teaspoon
4. lemon juice ----1 teaspoon
5. small onions ---- 20 nos
6. Tomato ---- 1 no
7. salt to taste
To Temper
1. Elachi ---- 1 no
2. cinnamon ----1 small bit
3. clove ---- 1 no
4. oil ---- 1/2 teaspoon
5. curry leaves / coriander leaves ---- few
6. chopped onions & garlic ---- 1 tablespoon
To Grind
1. grated coconut ---- 7 tablespoons
2. Khus khus / poppy seeds ---- 1 teaspoon
3. cashew nuts ---- 7 nos
Preparation Method
1. Clean , wash and chop the mixed vegetables and tomato.
2. Take 5 green chillies , 20 small onions , salt to taste and grind it raw as a smooth paste and keep it aside.
3. Then grind khus khus , cashew nuts & coconut separetly to a smooth paste and keep it aside.
4. Heat a vessel and add grinded onion & chillies , then add chopped mixed vegetable , ginger & garlic paste and salt to taste and add 2 cup of water and close the vessel with a lid and allow to boil till all the vegetables boil soft .
5. Then add the grinded cashew , coconut paste and allow to boil in low flame .
6. Then pre heat the oil in a pan & spultter cinnamon , clove , elachi , chopped onion & garlic , 10 whole green chillies , curry leaves and add this to the boiling kuruma.
7. When the kuruma is thick enough then put off the flame and add lemon juice and chopped coriander leaves and transfer it to a bowl.
Serve this for white Rice , veg - Biriyani , chappatis , pooris , Rotis , Naan & parathas.
Note
* Please don't skip lemon juice , it gives some extra taste to the kuruma.
* You can also add soya chunks with the veggies !
* You can also add thick coconut milk to this kuruma , it tastes great !
* If you need the spice level high , then add 4 to 5 green chillies extra while grinding onions & chillies.
