Ingredients
1. Tender white Brinjal ---- 1/4 kg
2. small onions ---- 20 nos
3. Tomato ---- 1 no
4. Tamarind ---- 1 small bit
5. garlic ---- 6 pods
6. Red chilli powder ---- 2 teaspoons
7. coriander powder ---- 1 teaspoon
8. Turmeric powder ---- 1/4 teaspoon
9. salt to taste
10. oil ---- 1 tablespoon
11. coconut milk ---- 1 cup
12. mustard seeds ---- few
13. jeera ---- few
14. fenugreek seeds ---- few
15. Asofotida powder ---- 1/4 teaspoon
16. curry leaves ---- few
preparation method
1. Grind onions , tomatoes , red chilli powder & coriander powder to a fine paste. ( grind everything raw )
2. Then slit the whole brinjal into length wise and soak this in water and wash it for 2 to 3 times in water.
3. Now heat a kadai and add 1 tablespoon of oil and add mustard , jeera , fenugreek , Asofotida , curry leaves.
4. Then add 4 to 5 chopped small onions and crushed garlic and fry this till onion turn to light golden brown.
5. Then add the brinjal with out water and fry this for 1 to 2 minutes.
6. Then add the grinded onion paste mixer and add turmeric powder , tamarind water and salt to taste and add 1 cup of water and allow this to boil for 15 minutes.
7. Then add coconut milk and boil this for 2 more minutes. when the kulumbu is thick enough then put-off the flame.
serve this kulumbu with hot Rice or even with Iddly , dosa
