Paruppu keerai poriyal

This picture  was taken in my kitchen  garden  which was grown organically.   I  have  nearly  9 to 10  variety  of keerai  in my garden , almost  daily  i  use to cook  one of the keerai ,  I  enjoy  it in  dosa, soups , pooriyal ,  kuttu , salads   and so on........  keerai  is twenty times  more  nutrional  valve  than  other  vegetables.   It  is  a  valvable  source  of  nutrients ,  rich  in iron ,  calcium ,  vitamin A ,  anti oxidants  and  veg  proteins ,  some  leaves  are believed  to keep  blood sugar  level  low.   So  make  a  habit  of eating  greens.


Ingredients


1.         paruppu  keerai                                     ---- 1 bunch
2.         grated coconut                                      ---- 1 tablespoon
3.         red chilli powder                                   ---- 1/4 teaspoon
4.         salt to taste
5.         small  onions                                         ---- 10 nos ( chopped )
6.        half boiled  moong dhal                         ---- 2 tablespoons
7.        mustard , jeera                                     ---- few
8.       oil                                                         ---- 1/4 teaspoon

Preparation   Method

1.       Clean   wash  and chop   the  greens.

2.       Heat  1/4 teaspoon  of oil  in a pan  and add  mustard ,  jeera   and  then  add  chopped  onions  and  saute  for  2 minutes.

3.      Now    add  the  chopped  paruppu  keerai  and  add  salt to taste  and  red  chilli powder  and  slow down  the  flame  and close  it  with  a lid  for  2 minutes.

4.    Then   open  the lid  and stir   it  and  then  add  the  half  boiled  moong dhal  and stir  it  still  it  cooks  with  out  any water.

5.    Then  finally  add  grated  coconut  and  mix  well  and put off  the  flame.
Serve   this  as  a side dish  for  Rice.  It  will be healthy  &  yummy  poriyal.

Note
*   In   the place  of moong dhal  you  can  also  use  half  boiled  thuvar dhal  each  gives  a  different  taste.
