Ridge gourd is peerkangai in Tamil and Beerakaya in Telungu. It is an extremely popular vegetable in all countries. It has assumed the reputation of the most tasteless vegetable to eat among children. But desite of the fact that it doesn't taste very good , but it has many health benefits. It is low in saturated fat & cholesterol and high in dietary fiber , it is an ideal choice for anyone who whises to lose some weight quickly. It is a low calorie vegetable. It is ideal for blood purifier , it is good for stomach , it helps to over come constipation and also aids in curing piles. A glass of ridge gourd juice mixed with other healthy vegetables in the morning can help to strengthen our immune system against any infection. more over it has excellent cooling properties.
Ingredients :
1. Ridge gourd ---- 1 nos big
2. pasiparrupu / moong dhal ---- 2 tablespoons
3. green chillies ---- 1 or 2 nos
4. cow milk ---- 1 cup
5. salt to taste
6. grated coconut
or
roasted groundnut granuals ---- 1 tablespoon
7. oil ---- 1/4 teaspoon
8. mustard & jeera ---- 1/4 teaspoon
9. curry leaves ---- few
Preparation Method
1. Wash , peel and chop the ridge gourd into small size cubes.
2. chop green chillies into fine cubes.
3. Heat a pan with a cup of milk then add moong dhal and close the pan and cook it in very low-flame till the moongdhal is semi cooked.
4. Then add the chopped ridgegourd & green chillies and again close it with the lid and cook it till it cooks soft.
5. Then add salt to taste and then add either grated coconuts or groundnuts granuals and allow it to boil.
6. Then heat a separate kadai and add 1/4 teaspoon of oil and then add mustard jeera & curry leaves , when it starts spluttering then putoff the flame and add this to the boiling ridgegourd.
7. Then turn off the heat and transfer it to a bowl.
Serve this as a side dish with Rice or even with chapatties.
