The Tamil name of snake gourd is pudalanga. 100 grams of snake gourd contains only 20 calorie. It is also rich in minerals like magnesium , calcium and phosphorous. It is rich in dietary fibre and contains many medicinal compounds. It creates a cooling effect in the body. Since it is a low- calorie food, diabetics can safely include it to reduce weight while getting enough nutrition. Snake gourd is a popular home remedy for jaundice. Combination of the leaves is beneficial in the treatment of jaundice , if given in 30 to 60 grams doses with a decoction of coriander seeds thrice daily. Snack- gaurd is the best house hold remedy for heart problems.
Ingredients
1. snake gourd ---- 250 grams
2. Rice flour ---- 2 tablespoons
3. Besan flour / kadalai mavu ---- 2 tablespoons
4. ginger & garlic paste ---- 1/4 teaspoon
5. salt to taste
6. Red chilli powder ---- 1/2 teaspoon
7. Turmeric powder ---- 1/4 teaspoon
8. oil ---- 1 tablespoon
Preparation Method
1. Wash and remove the seeds and chop the snake - gourd into 1 inch cubes.
2. Now along with snake- gourd cubes , mix salt and keep it for 15 minutes. Then using your hands squeeze the snake-gourd and remove the water from it.
3. Then take a bowl add besan- flour , rice flour , ginger & garlic paste , red chilli powder and mix well , then add the squeezed snake-gourd and mix altogether well.
4. Now heat a wide pan with 2 tablespoon of oil , when the oil is hot then carefully add the flour, mixed snake- gourd pieces and distribute them to the whole pan. ( don't over crowd the pan )
5. Fry for few minutes and turn the snake- gourd pieces. Fry till the snake - gourd pieces cooks well.
SERVE CRISPY SNAKE- GOURD FRY WITH STEAMED RICE.
