Ingredients :
1. Carrots ---- 1/2 kg
2. cashewnuts ---- 10 nos
3. safforn ---- a pinch
4. sugar ----- 2 cups ( adjust the sugar level to your taste )
5. High fat milk ---- 1/2 liter boiled
6. cashew broken ---- 3 table spoons ( Roasted in ghee )
Preparation Method
1. Soak the cashew nuts in water for 15 to 20 mintues .
2. Pressure cook the carrots for 2 to 3 whistle .
3. Then cool the carrots and add the soaked cashewnuts and grind them to a smooth paste by using a mixer jar .
4. Heat a saucepan and add the grinded carrots & cashew paste and boil for 5 mintues .
5. Then add sugar to taste .
6. Then add boiled milk and allow to boil for another 10 mintues .
7. Finally put-off the flame and garnish with roasted almonds and saffrons . wait till it cool down.
8. Then refrigerate it and cool it .
Now serve this delicious carrot kheer.
