Avial

Ingredients :

1.     Mixed   vegetables  chopped  in 2 inch thickness ---- 1/2 kg
      ( ash goud , raw banana , cluster beans , drum stick
        carrots, french beans , potato , raddish , turnip , brinjal )

2.    grated coconut                                                    ---- 4 tablespoons

3.    green chillies                                                       ---- 8 nos

4.    salt  to  taste

5.    Thick curd                                                         ---- 1/4 cup

6.    coconut oil                                                         ---- 1 tablespoon

7.     jeera                                                                 ---- 1/2teaspoon

Preparation  Method

1.       Grind  green chillies ,  jeera ,  grated  coconut    and   salt  to  taste     and   grind   it  to  a  smooth   paste.

2.        Now   heat   a  kadai     and       add     the    grinded    paste    and   chopped    mixed    vegetable        and    close    the    kadai   with   a  lid   and   cook   this   till   it   boils    soft   in   very   low flame.  ( If   needed   sprinkle   little  water  while  boiling. )


    
3.      Then   open   the   lid   of     the   kadai   and   add  1 tablespoon   of   coconut    oil       and    mix   it   well   and   then   put-off   the   flame.


4.       Now    add    the   thick   curd   to   the    cooked   vegetables    and   mix   it   well   and   transfer    it   to  a   bowl.




*           This      is  a   whole some    concoction      of    fresh    vegetables    put   together    in   thick   gravy.      It     goes   well    with    rice      and    accompanied    by   rasam    /      sambar.

  1. we can add yam aswell in avial, if you drop few fresh tender curryleaves it the gravy before removing form flame will give a nice flavor
