Happy pongal to all. I want to make this pongal bit healthy this time , so i used quinoa. This is the first time i tried to substitute rice with quinoa in sweet pongal and i was very curious to see the out comes. finally without any compromization the output was amazing.
quinoa , the grain that has gained popularity among many Indians these days have been used by people in Andes region from about 3000 - 4000 years ago. It contains essential amino acids , calcium , phosphorus , iron and not to forget protein and is gluten free. plus its mild taste and rich texture make it perfect for different kinds of dishes. Reducing diabetes risk , lowering cholesterol , controlling blood pressure , supports weight loss and maintenance.
Ingredients
1. quinoa ---- 1 cup
2. jaggery ---- 21/4 cups
3. cardamon powder ---- 1 pinch
4. Roasted cashews and Raisins as needed
5. ghee ---- 25 grams
6. boiled milk ---- 1 cup
preparation method
1. wash the quinoa and pressure cook it adding 2 cups of water and 1 cup of milk and cook this for 2 to 3 whisles.
2. open the pan after pressure drops, then mash it with a spatula.
3. Then add jaggery powder and cardamon powder and mix well.
4. Then add fried raisins and cashews as needed.
5. Nicely mix the pongal and add ghee and stir well till it comes to needed consistency.
6. Now the yummy quinoa sweet pongal is ready to serve hot !
