Spinach is a rich source of iron. Hence I try to include it in our diet at least weekly 4 to 5 days. cooking spinach with dhal always was boring and so I wanted to try something new. The recipe which I tried here was very tasty and different. It is very easy and quick to do. Try it out and enjoy !
Ingredients :
1. palak ---- 1 bunch
2. green chillies ---- 4 to 5 no
3. cashew nuts ---- 3 nos
4. grated coconut ---- 1 tablespoon
5. salt to taste
6. oil / ghee ---- 1 tablespoon
7. cooked Rice ---- 3 cups
Preparation Method
1. Clean and wash the palak leaves and then cut it.
2. Now heat a pan and add the palak , green chillies and saute it for 2 to 3 minutes , there is no need to add water.
3. Then cool it and grind it with cashews , coconut & salt. to taste.
4. Now heat a pan with oil or ghee and add grounded paste for a few minutes. ( do not fry it for a very long time or cover it with lid as the color may change )
5. Now mix this with already prepared plain Rice.
Serve this hot or pack for lunch box . palak Rice with papads taste good.
