This is a traditional Maharashtrian sweet, usally they serve as prasad for sathyanarayana puja . They call this is kanketha shira that means wheat flour shira. It is a rural specialty rustled up for surprise visitors. The golden roasting in ghee is the key to a good shira.
Ingredients :
1. Whole wheat flour ---- 1/2 cup
2. ghee ---- 1/2 cup ( equal ratio of wheat flour, never
compromise the quantity )
3. sugar ---- 3/4 cup ( slightly lesser than two parts of flour)
4. water ---- 1 1/4 cup ( 2 1/4 parts of flour)
Preparation Method
1. Heat ghee in a non stick pan.
2. Add wheat flour to the heated ghee.
3. While you place the pan to heat ghee, place the pan of water ( flour : water = 1 : 2 1/4 ) simultaneously on the adjacent stove over medium flame.
4. Blend ghee + wheat flour well. It should be watery and not thick than you see here. This is most important.
5. Keep in low flame and stir the mixture continuously.
6. Now you can see the colour changing while the flour gets cooked in ghee. This may take approximately 2 to 3 minutes.
7. Now add sugar , then add the boiling water and stir continuously.
8. While stiring ensure there are no lumps formed. It is safer to put-off the fire for a few seconds until you blend the mixture well.
9. Now keep the flame low and stir it within a minute after you mix the flour, ghee and boiling water you get a rich colour.
10. Then within seconds you can see the whole thing forming into a smooth glossy mass , leaving sides of the pan with a wonderful aroma.
11. Then put-off the flame and transfer to another bowl and leave it cool.
* Now Enjoy the warm Halwa.

* There is no added colour & flavours. There is also no nuts in it.
