I thought of doing a sweet for my daughters birthday's at-last I decided of doing this ash gourd halwa. to prepare kashi halwa one must fully mature ash gourd , which is heavy for its size. when cut it should be firm and not spongy. ash gourd halwa has so intense flavour and texture is simply so good . Hmm simple the name makes my mouth to water its simple and devine thats all i have to say.
Ingredients :
1. Ash gourd ---- 500 grams
2. sugar ---- 500 grams
3. milk ---- 1 cup
4. ghee ---- 1/2 cup
5. cardamon powder ---- a pinch
6. colour powder ---- a pinch
7. Roasted cashewnuts ---- 10 nos
Preparation Method
1. Peel ash gourd and grate it .
2. Heat milk and when it boils add ash gourd. close the lid . when ash gourd is cooked soft and milk evaporates, then put-off the flame. Then grind it to a smooth paste and keep it aside.
3. Heat a kadai add 1/2 cup of water and then add sugar , when the mixture boils add a spoonful of milk, then add colour powder.
4. When the syrup becomes thick , add ash gourd paste and fried cashewnuts. Add ghee little by little and stir , after sometimes add powdered cardamons,
5. When it form to a ball shape dough then put-off the flame and transfer to a bowl.
