Summer is Tomato season, and it cost very cheaper in these season . Today the price is only 4 Rs per kg . When the price is low like this you can make recipes like pickle , jam , ketchup , juice and so on ......... By this way you can preserve it up to 6 months to 1 year.
Ingredients:
1. Ripe Tomatoes ---- 1 kg ( nattu thakkali is best option)
2. Red chilli powder ---- 1 small tea cup
3. Salt ---- 1/4 teacup
4. Oil ---- 1/4 cup
5. mustard seeds ---- 1 teaspoon
6. Asofotida ---- 1 teaspoon
7. garlic ---- 1/2 teacup
8. Tamarind ---- small lemon size ball
Preparation Method
1. Wash and wipe the tomatoes dry, cut into cubes.
2. Heat a pan and add the cubed tomatoes and allow to cook till soft.( do not add any water to it . ) Then cool it.
3. Grind salt to taste , tamarind and cooked tomatoes using the mixer jar. ( do not add any water to it . )
4. Now heat a kadai add 1/4 cup of oil to it, then add mustard & asofotida and wait till the mustard crackle .
5. Then add garlic and fry this for 1 to 2 mintues .
6. Then add grinded tomatoes and 1 teacup of red chilli powder and stir this in medium flame . ( It may take nearly 15 to 2 0 mintues. ) Once the thokku is thick and oil floating , then put off the flame and wait till it cool.
7. Then transfer it to clean glass bottle, by this method you can preserve it for 3 months.
It is a simple recipe and I finished making it pretty soon. This yummy tomato thookku you can have for dosa , chapattis , kchichdi , uppma , rice and so on...........
