Ingredients:
1. Basmati Rice ---- 1 cup
2. Brinjals ---- 3 nos
3. Ripe juicy tomatoes ---- 3 ( big one )
4. green chillies ---- 1 ( slit it )
5. ginger ---- 1 small
6. Turmeric powder ---- 1/4 teaspoon
7. oil ---- 1 teaspoon
8. salt to taste
9. mustard & urad dhal ---- 1 teaspoon
10. Asofotida ---- 1/4 teaspoon
11. curry leaves
TO ROAST AND GRIND
1. coriander seeds ---- 1 teaspoon
2. Bengal gram ---- 1 teaspoon
3. urad dhal ---- 2 teaspoons
4. Red chillies ---- 3 nos
5. Black pepper corns ---- 1/4 teaspoon
6. grated coconut ---- 1 tablespoon
Preparation method
1. soak basmati rice in water for 10 minutes then drain and cook rice adding 2 cups of water and keep it aside.
2. cut brinjal into cubes or length wise.
3. Heat a teaspoon of oil and fry coriander seeds , channa dhal and pepper . After it turns slightly brown add coconut and fry. Then cool it and powder & keep it aside.
4. Heat a tablespoon of oil and add mustard , urad dhal , asofotida , curry leaves , then add chopped brinjal , chilli , finely chopped ginger & turmeric powder, cook the brinjal in low flame.
5. Then add the grounded powder and salt to taste.
6. when the brinjals are slightly cooked , then add the chopped tomatoes and cook well.
7. finally add the cooked rice and mix well.
8. Garnish with coriander leaves .
serve this with Raita or papads.
