pudina / mint Rice



Ingredients

 mint leaves  / pudina                             ---- 1/2 cup
 curry leaves                                           ---- 1 full hand
 Basmati   Rice                                       ---- 2 cups
 Green chilly                                          ---- 6 no
 big onion                                               ---- 1 no ( finely cubed)
 garlic                                                     ---- 5 flakes(finely cubed)
 ginger paste                                          ---- 1/2 teaspoon
 garam masala powder                           ---- 1/4 teaspoon
 grated coconut                                       ---- 6 tablespoons
.oil                                                          ---- 2 tablespoon
 ghee                                                      ---- 1/2 teaspoon
salt to taste
cashew nuts                                          ---- 4no

preparation Method

 Grind  coconut , mint leaves , curry leaves, green chillies & salt  altogether  adding one cup of water and extract the milk out of this grinded    paste. grind another time also using one cup of water and extract the second milk also  and keep this aside.

Now  heat a  thick bottom vessel  and add  oil and then add the chopped onions and garlic .
then add 4 to 5 cashew nuts  , ginger paste and  saute till light golden brown.  then add  the washed  basmathi rice and add 4 cups of extracted  grinded  coconut milk  and close it with a lid and cook for 10 minutes.

 once it is cooked add little ghee and cook for 2 more minutes .

serve this with any Ratia  of your choice!!!!!!!!!
