Ingredients
1. carrots ---- 3 nos ( cut into roundels )
2. button mushrooms ---- 7 nos ( chop it )
3. baby corns ---- 7 nos ( chop it )
4. tofu ---- 200 grams ( chop it )
5. roasted cashew nuts ---- 6 nos
6. roasted sesame seeds ---- 2 tablespoons
7. coconut oil ---- 2 tablespoons
8. fresh basil leaves ---- 1 cup ( chop it )
9. dark soy sauce ---- 1 tablespoon
10. brown sugar ---- 1 tablespoon
For the stir fry paste
1. pepper corns ---- 1/4 teaspoon
2. sea salt ---- 1 teaspoon
3. garlic ---- 6 cloves ( chop it )
4. Thai chillies ---- 2 no
Preparation method
1. clean & cut the vegetables.
2. Take all the stir fry paste ingredients for making paste , crush and make a coarse paste and keep it aside,
3. Now heat a kadai with oil and add the coarse paste and fry it for a few seconds on high flame, then add the vegetable and stir fry , fry it in medium high.
4. keep on stir frying for 7 to 8 minutes. Then add the soy sauce and brown sugar and add the cubed tofu and covred them all with a lid for 3 to 5 minutes.
5. Then add the chopped basil leaves and fry the leaves just become soft. check for salt and add if required.
6. finally garnish with roasted cashew nuts.
serve immediately with rice , with bread , rotis , puris or with naan

Interesting yummy recipe. I tried some Thai recipes but haven't tried this one. Vegetable stir fry recipe really makes my meal complete. Thank you for sharing this.
