Kadamba Satham

Mixed  vegatable Rice is a simple but tasty dish.


Ingredients:


1.   Rice                                             ---- 1 cup
2.   Thoovardhal                                ---- 2 tablespoons
3.   moongdhal                                  ---- 1 tablespoon
4.   chopped mixed vegetable
    (carrot,beans,brinjal,bottlegourd
     greens,pumpkin,cabbaga,beans etc) ---- 2 cups
5.  Turmeric powder                             ---- 1/4 teaspoon
6.  Red chilli powder                            ----1  1/2 teaspoon
7. coriander powder                            ---- 1/2 teaspoon
8.  small onion                                     ---- 10 nos
9.  Tomato                                          ---- 1 nos ( chopped)
10. grated coconut                              ---- 1 tablespoon
11. mustard, uraddhal                          ---- 1 teaspoon
12. Asofotida                                     ---- 1/4 teaspoon
13.  curry leaves, pudina leaves,coriander leaves ----few
14.  oil                                                ---- 1 tablespoon
15.  salt to taste
Preparation Method

1.  Wash  rice & dhal  together  and  keep  it aside.
2.   Now heat a pressure cooker  with a tablespoon  of oil.
3.   Then  add mustard , asofotida, curry leaves , chopped onions   and  fry  for a minute.
4.    Then  add mixed chopped  vegetables & tomatoes  and  stir  this  for 2 minutes.
5.   Then  add  washed rice & dhal,  grated  coconut  and fry  for 2 minutes.
6.   Then  add  salt to taste,  turmeric powder , coriander powder, chilli powder,  and  add  3 cups  of water  and close  the pressure cooker  with  a lid  and  cook  for 2 to 3 whistle.
7.    Then  cool  it  and  open  the lid  and  transfer  it  to a  casserole.
Serve  this  with pickle  &  Raitha  &  pappads.

This  is very simple  to  pack  for lunch box.
